Shopping List:

2 cups sunflower kernels, soaked 24 hours

¼ cup pickle juice (I didn't add this)

¼ cup lemon juice

¼ teaspoon himalayan rock salt

½ cup yellow or white onion, minced

½ cup celery, minced

¼ cup parsley, minced

¼ cup fresh dill, minced

2 tablespoon pulse flakes (optional, sometimes I add other times I don't. Whole Foods has the cheapest thus far)

8 collard leaves (or coconut wraps with/out collard greens)

4 pickles, sliced

1 carrot, cut matchstick

Make extra! You will want left overs! This is a super easy recipe and taste great. Add some avocado and nutritional yeast for an extra bang!)

Cashew Sour Cream

Please check out the full recipe above!

Shopping List:

1 cup raw cashews, soaked 2 – 3 hours

1/2 – 3/4 cup unsweetened almond milk or water (I use water)

juice of one small lemon or about 1 tablespoon

1 teaspoon apple cider vinegar

pinch of mineral salt

To make a spicy cashew sour cream (for a soup or walnut tacos) add cayenne to taste!

Raw Vegan Walnut Tacos

Please check the full recipe above!

Shopping List:

1 cup walnuts

1 Tbsp olive oil

1 Tbsp tamarin or soy sauce (I used coconut aminos)

1 tsp oregano

1 tsp cumin

1/2 tsp chili powder

1/4 tsp salt

1/8 tsp cayenne (I add a little more for the spicy flare)

I recommend doubling the recipe or even tripping it so you have lots of left overs! These are extremely filling, so don’t be fooled :) .

Another tip, get coconut wraps and use those as tortillas to make it corn and gluten free. Spicy cashew sour cream tastes amazing on top.

Raw Vegan Turtles

Shopping List:

Chocolate Ingredients:

1/2 Cup Virgin Coconut Oil (I used cocoa butter)

3 Tbsp Natural Cocoa Powder

1/8 Cup Pure Maple Syrup

Caramel Ingredients:

10 Soft (Fresh and Pitted) Medjool Dates

1 1/2 Tsp Vanilla Extract

1/2 Tsp Fine Sea Salt

1 Tbsp Coconut Oil

2 Tbsp Natural Pure Almond Butter

10 Drops Liquid Stevia

30 Pecans

These are absolutely amazing and super easy to make! My recommendation is to use cocoa butter (instead of coconut oil), cacao powder and himalayan sea salt to make the chocolate coating! I also lessened the amount of maple syrup and took out the stevia because dates are very sweet as it!
